Dom helped build and shape Bartolini’s Restaurant into the awesome small family business it is today.

Someone You Should Know at
BARTOLINI’S-
Meet Matt our Kitchen Manager
One thing people are surprised about running a kitchen is your planning 1-2 weeks in advanced. It isn't on a day by day basis of reservations. I've generally ordered/planned stuff 1-2 weeks before events so the week of nothing is short and you have extra time incase of an accident or increase on the customer side.
I've been at Bartolini's for a non-consecutive 13 going on 14 years. Found an ad for part time catering help and was working part time for Bartolini's and a grocery store until I moved to full time line cook/caterer at Bartolini's.
My favorite item on the menu is our calzones. Either with chicken and Alfredo or meatballs with our raspberry BBQ sauce.
The busiest shift ever in the kitchen and we all can still agree on is Mother's Day during the covid lockdown. I was originally scheduled to work until 4. It was pickup only as we were locked down, and I worked until 9 because there were roughly 30 cars outside waiting to pick up orders until we closed. We had to even stop taking orders at 7:00 ish because we were booked solid for the entire night. Seeing the camera footage of the cars snaked around the parking lot at the DMV for hours on end showed how much loyalty our customers have with us.
One thing I've learned about being a kitchen manager that helps outside or work is organizing. I've been keeping a better calendar of my own events and planning things better with family. And also planning my own food. Meal prep for myself has become a bigger goal in life instead of grabbing meals.
If I had my own special it would be my butternut squash risotto with roasted chicken and brussel sprouts. I roast and puree a butternut squash with some heavy cream and cinnamon. Make a standard risotto, mix in the puree until you have the flavor/conistancy. Top with nice roasted chicken and crispy Brussels.
Customers may not realize that everyday you have to sit down and plan everyone's day. Prepping food, cooking, and cleaning are always a given. Everyone coming in for the day asks what they need to do and what we have going on. Every day is different, people need to be shifted around, different prep needs to be done, catering is posted and planned out for the day/week. Start your days talking and organizing.
Restauranting has taught me that there is always something new to try. New dishes from new people to go and see are a part of life. I always love knowing there are some people who come in on a bad day and have it turned around from a good meal. Or someone new comes in to find their next favorite spot to eat.
Honestly my proudest moment at Bartolini's probably has been this past Christmas season's organization/execution. From our standpoint it was incredibly successful and a smooth ride for such a busy/stressful time of the year, which we want to replicate going forward.
The impact I want to leave to anyone I worked with is that together even on a busy night teamwork and being there for each other is the key to anything. Never put yourself above anyone. Help who needs help, and push for the teams goal together. Lead them fairly and let them know you'll get your hands dirty to make sure nobody is left behind.
Being part of Bartolini's means alot. I've worked in places being unfair to myself and others. Everyone is treated fairly and equally.
