"I have always had a passion for bringing people together, and the restaurant industry allows me to do that in a way no other industry can. There are incredible bonds formed around food and drink, creating moments of connection and community."

This Women’s History Month, we’re honoring the women of Mercat by sharing their stories, perspectives, and experiences in the industry. First up, meet Mars, our Sous Chef!

What inspired you to pursue a career in the restaurant industry, and who has been a woman that’s influenced your journey along the way?

"For as long as I’ve known, food has been the glue of community because it brings people together. The most memorable moments of my childhood were surrounded with food at the dinner table, including Southern staples like Gumbo, Red beans and rice, Mac and cheese, greens and cornbread. My great-grandmother, Ruby Pearl, was the heart of my family and the house for a great meal. Her family owned land in Little Rock, Arkansas where they harvested many vegetables, owned chickens and produced cloth to provide clothing for our family. When my grandmother moved to Chicago in the 40s, she passed down many family recipes as well as traditions which have produced a strong lineage of great chefs in my family."

How do you hope to see women continue to shape and lead the restaurant industry?

"I would love to see more women in leadership in the Food industry. Women that not only cook well but value the importance of storytelling through food. Mashama Bailey is a chef that inspires me today. She turned an old greyhound bus station in Savannah, Georgia into a southern kitchen oasis. It’s a restaurant that tells a story, includes history and a modern play on old southern traditions through food."

What’s one thing you’re most proud of in your work here at Mercat?

"Though I am new to the space, I believe the history in the building, the staff that make everything flow smoothly, and the Spanish cuisine give a unique perspective to Michigan Avenue in Chicago. Food has no limits and I want to help continue to elevate the experience overall. I am excited to see how this environment shapes me into a better chef, leader and woman."

Take the train or bus to the Roosevelt Station. Walk south on Wabash Avenue towards 13th Street. Turn right onto E 13th Street and continue onto S Michigan Avenue. The restaurant will be on your left.

Driving and Parking:
From Lake Shore Drive, take the Randolph Street Exit and head west towards Michigan Avenue. Turn right onto Michigan Avenue and continue for several blocks until you reach the restaurant which will be on your left-hand side. There are several parking garages nearby where you can park your car.
