Whoβs been seeing a lot of sardines lately? π Itβs trending and what better way to explore than this Octoberβs National Pasta & Seafood Month?!
This cozy lemon sardine pasta is an easy, delicious way to work toward eating the recommended seafood twice a week.
οΏ½Serves 4
Ingredients
β’ 12 oz pasta of choice
β’ 2 cans sardines in lemon olive oil (4-5 oz each)
β’ 2 tbsp olive oil
β’ 2 tbsp butter, melted
β’ Juice of 5-6 lemons
β’ 4 cloves garlic, finely diced
β’ 1 tsp dried oregano
β’ 2 tbsp capers, drained
β’ 2 tbsp grated Parmesan cheese, plus more for serving
β’ Optional garnish: 1 tbsp dried parsley or 2 tbsp fresh parsley, chopped
Directions
1. Cook pasta according to package directions. Reserve Β½ cup pasta water before draining.
2. In a large skillet, heat the olive oil, butter, lemon juice, garlic, and oregano over medium heat. Bring to a gentle simmer and stir to combine.
3. Add the sardines along with a little of the lemon oil from the can. Break the sardines apart with a spoon and let simmer for 2-3 minutes.
4. Stir in the capers and continue simmering for 1-2 minutes.
5. Add the cooked pasta and toss until evenly coated. If needed, add a splash of reserved pasta water to help the sauce cling to the pasta.
6. Finish with Parmesan and parsley. Serve with extra Parmesan and fresh lemon wedges, if desired.

Crockpot, crockpot, cook me dinner πΆπͺ
We might not be able to cast spells but this cozy apple & pork chop recipe is easy, budget-friendly, and perfect for those busy fall nights when you have approximately ZERO extra energy to figure out dinner.
What you need β¬οΈ
π 5 pork chops
π Β½ cup chicken stock
π Salt, pepper + garlic powder
π 4 Michigan apples, peeled + chopped
π 2 tbsp melted butter
π 2 tbsp brown sugar
π 1 tsp cinnamon + a sprinkle of salt
π Stuffing + 1Β½ cups chicken broth
How to make itβ¬οΈ
Add pork chops and Β½ cup chicken stock to your crockpot.
Season with salt, pepper and garlic powder. Add apples and cover with melted butter, brown sugar, cinnamon and salt.
Mix stuffing with 1Β½ cups chicken broth and layer that over the apples.
Cover, set it on low and forget it for 3β4 hours
