This award-winning restaurant is an ode to the fishing villages and farmsteads along the Atlantic Coast of Spain, and accordingly, showcases a seafood-driven menu rooted in regional flavors and techniques. Settle into the colorful dining room and begin with the matrimonio de anchoas, a dish featuring pickled and cured anchovies, imparting umami and saltiness.
“This is a balanced dish that always leaves me reaching for my drink,” says chef Marcos Campos. “It brings back many memories spent with family and friends sitting on a patio in Spain in the summer, when anchovies are in season.”
From there, move on to the jamón ibérico. Entirely acorn-fed and free-range, the ingredient is considered one of Spain’s greatest culinary treasures — so prized, in fact, that the team takes special care in carving it to order each time.
“For me, there is nothing as equally simple and unbelievable as jamón ibérico,” says Campos. “I could eat it every day for breakfast, lunch, and dinner.”
And for a dish as beautiful as it is flavorful, don’t miss the razor clams and white asparagus, a classic combination of flavors honoring both land and sea with white asparagus from Navarra and two different conservas made with caviar and Galician razor clams.
“Conservas are found all around Spain, from family homes to Michelin-starred restaurants,” says Campos. “I always find it incredible the possibilities that exist for preserving some of Spain’s best products in this way.”
The restaurant’s wine list covers as much ground as the menu, spanning regions like Galicia, La Rioja, and Rueda, and like the dishes, cocktails are traditionally inspired — case in point with the Corazón Rojo, a mezcal dram featuring classic Spanish ingredients like bay leaf and pimentón, or the Crepúsculo, a gin-based nod to Spain’s seafood bounty with squid ink and wakame-infused honey.
