After months of apples, citrus, and patiently waiting, the first berries are making their way into the bakery, and we're very ready for it. This week's menu accidentally became a love letter to rhubarb. We're not mad about it. Raspberries are back in the rhubarb galette, rhubarb lemonade returns Saturday, and rhubarb buckwheat financiers are making another appearance. Add in a new asparagus cheddar croissant and a fresh batch of kouign amann, and the pastry case is looking particularly tempting this weekend. And before the regulars start asking—Focaccia Saturday is taking the weekend off, but it will be back before you know it. 🍞❤️

Chicago finally feels like it’s leaning toward summer and we are fully participating. Rhubarb is everywhere, berries are right around the corner, and this weekend’s menu is stacked with things that feel equally appropriate for a picnic blanket, a dinner party, or eating standing over your kitchen counter while hiding from your family for five minutes. The weather finally feels like Chicago remembered how to be pleasant, and honestly? We’re leaning into it. The cold brew is flowing, the pastry case is looking extra cute, and there’s a general “sit outside a little longer than you planned” energy happening around here. Memorial Day weekend is also sneaking up quickly, so consider this your gentle reminder that burger buns, snacks, and bakery treats make you look like the organized person at the cookout. Even if you absolutely are not.

Memorial Day weekend preorders are live now — Memorial Day weekend is around the corner, and we’ll have brioche burger buns available Saturday and Sunday along with French onion dip while supplies last. We’re also excited about a few new wines and a rhubarb beer that feel very appropriate for long weekends and backyard hangs.

Spring is doing what spring does best around here: rhubarb everywhere, ramps sneaking into everything delicious, and the bakery shelves looking dangerously good. Memorial Day weekend is also somehow around the corner already, which feels fake, but the calendar insists. The Diplomat — our turkey sandwich — just got a little seasonal glow up with lemon dill garlic aioli. Bright, springy, and dangerously easy to crave multiple days in a row.

Whether you’re celebrating a mom, missing a mom, mothering tiny humans, grown humans, pets, plants, sourdough starters, or just trying to survive the weekend with caffeine and pastry intact — we’ve got you.

The pastry cases are loaded, the pavlovas are fluffy marshmallow clouds of joy, the smoked salmon focaccia is back all weekend long, and yes… we made extras for the planners, the procrastinators, and the people panic-ordering at 7am.

We’re hiring a Kitchen Manager at Floriole.

This is not a role for someone who just wants to bake (we’ve got plenty of that covered). This is for someone who wants to run a kitchen well—to lead a team, bring order to complexity, and make sure everything we put out into the world actually reflects who we are.

You’ll be responsible for:
• organizing production so the day runs smoothly (and sanely)
• managing inventory + prep so we’re not constantly scrambling
• leading and supporting a team that needs clarity, consistency, and follow-through
• upholding quality—if it’s not right, it doesn’t go out
• working closely with leadership to keep things moving forward, not just holding them together

You should be someone who:
• is highly organized (like… actually organized, not “in theory”)
• is comfortable with systems, spreadsheets, and communication
• can make decisions without waiting to be told what to do
• understands that leadership is about accountability, not just vibes
• cares deeply about craft—but knows that ex*****on matters more than ideas
