🍶 Saké Spotlight:
Fukucho Moon on the Water
🌙🌊
Miho Imada, owner of Fukucho and Toji (master brewer) is one of few female Toji in Japan. Fun fact: Miho is a former Kabuki actress!
Hiroshima is the birthplace of Ginjo saké and is known for remarkably soft water that requires expert skill to put in saké production. The soft water enable a highly controlled, precise fermentation, resulting in vibrant fruit aromas.
Tasting Notes include a fruity scent of lime and melon, with bold hints of fennel, white pepper and allspice. Taste gravitates to ripe cantaloupe and anise while the minerality from the soft water is evident in the finish.

An updated take on a tasty classic: the Oshinko Plate, which pairs perfectly with the Hakutsuru Junmai Draft Saké!
Oshinko translates to “fragranced dish”. From left to right, the plate includes:
-Sweet Pickled Daikon dressed with La-Yu chili oil and topped with scallions
-Pickled Japanese pearl onions dressed with crunchy garlic
-House made Sunomono pickles dusted with Togarashi
The Hakutsuru Junmai Draft Saké offers notes of a soft buttery or creaminess at the front, with a banana taste in the middle and a crisp, smooth finish (like water).

To get to the location on N Damen Avenue in Chicago, you can take the CTA Blue Line train to the Damen stop and then walk north for about 10 minutes. Alternatively, you can take the #50 Damen bus and get off at the intersection of Damen and Milwaukee, then walk south for about 5 minutes.
If driving, there is street parking available on N Damen Avenue and surrounding streets. However, it may be limited during peak hours. There are also paid parking lots nearby.
