A coconut 🥥 🌴 coferment that will leave your taste buds shell-shocked 👅 ⚡️
Produced by Pedro Nel Salazar alongside the OG of wild fermentations, Edwin Noreña. This carbonic macerated caturra is a coconut lovers dream - & the perfect coffee to pair with our mango & lime macerated syrup topped with a vegan coconut cold foam (try it at the cafe!). The result is a dynamic & approachable cup-profile that works with a variety of other recipes but is complete & enjoyable all on its own - especially while you’re basking in the sun on a bright summer day.

Next up is a coffee we’ve been quietly sampling to a few cafe regulars - one of our favorite experiences with tasting notes is the memory recall we hear from people tasting coffee. It instantly opens up intimate conversations that we may not have otherwise had. In this case, a childhood memory from mom’s cooking. Authentic notes of lemongrass, coriander & masala led us to a conversation to know another person on a deeper level. The more complex the coffee, the more conversation it seems to provoke as everyone touts a different memory from way back when.
The coffee: executes these experiences like none other. As if the Gesha variety wasn’t reputable enough - the processing of this coffee is so complex that it could only be achieved by a master of fermentation who deeply understands the consequences of each step. Taking a page from winemaking, this carbonic macerated coffee was first inoculated with brewers yeast & finished as a honey process - but not before being sloshed around in its own cherry juices (mosto) effectively completing a rare triple anaerobic fermentation.

Sidra. Perhaps the most anticipated & well received release of the year. A tropical mashup akin to the discontinued flavor profile of (we miss you)🦓 🌈. No adjunct necessary to display such a vibrant array of fruits & sweetness - the past few years of coffees have been a wild ride, always topping his last greatest production. Maintaining coffee trees in a climate as harsh & uniquely challenging as Yemen’s Western & Northwest Ranges requires the kind of proven techniques that only generations of farming can figure out. Coffee farms are iconically terraced on arid, incredibly steep slopes, where irrigation is not available, bore holes are dug manually into rock to access individual water reserves for each tree whenever rain is scarce. Density of coffee crops are about 1/6 compared with common farms in Latin America - & these are just some of the many challenges that, by all accounts, should insist on an inevitable extinction of Yemen-grown coffee.
But the Haraz people have been cultivating coffee for about 600 years. Enjoying it for about two centuries before Europeans even knew what it was. Today, the endurance of coffee cultivation is nothing short of a miracle. This nanolot of hand-selected cherry was processed in small installments, anaerobically fermented for 48-72 hours & dried in raised beds before being air shipped directly to the U.S.
A modernized approach from a culture of incredible people that have been cultivating these flavors for centuries. Destined to sit magnanimously upon your coffee table.

Crafted by Edwin Norena in Quindio, Colombia, this co-fermented Caturra underwent a triple fermentation process with carbonic maceration and finished as a honey process.
This coffee is bursting with candied green apple and caramelized sweetness. Juicy raspberry & soft florals like rose make this a high definition, mouth watering cup. Available in-store and online!

PRODUCED BY THE FAMOUS, THE ALCHEMIST, IN QUINDIO, COLOMBIA - THIS CO-FERMENTED COFFEE IS PAR FOR COURSE ON WHAT WE EXPECT FROM EDWIN - BOASTING A TRIPLE FERMENTATION EXECUTED IN THREE SEPARATE STAGES & TOTALING OVER 70 HOURS - FINISHED AS A HONEY PROCESS. PREPARE YOURSELF FOR DRAMATIC NOTES OF CANDIED CARAMEL APPLES, THE JUICINESS OF RIPENED RASPBERRIES & A FLORAL PUNCH OF FRESH ROSES & LILAC.
WHAT WE FIND MOST UNIQUE ABOUT THIS COFFEE IS THAT EDWIN TAKES A PAGE FROM THE WINEMAKING BOOK, UTILIZING A TECHNIQUE CALLED “SLOSHING” - WHICH MAKES USE OF THE RESIDUAL SUGARY RUN-OFF FROM SMASHED GRAPES (IN THIS CASE, SMASHED COFFEE CHERRY) IN THE FERMENTATION. Happy New Year
We are so thankful for all the things 2025 brought our way. From partnering with new coffee producers around the globe, to having a dedicated team of baristas, to competing in the US and abroad (Guatemala) and walking away with a few Silver Medals. It's an honor to witness what once started as a small dream take a life of its own. None of it would be possible without the support and trust from our community. It means the world to us! Thank you.
New Things Happening
We started a new partnership in the fall of 2025 with herbalist & educator, Julissa Gillig of the Glastonbury Institute. Since then we've been hosting monthly workshops. We've learned to be intentional with the concoctions we prepare like fire cider, shrubs, syrups etc and we are excited to keep these workshops going!
Our 1st workshop of the year will take place on January 30th from 6pm-7pm. SAVE THE DATE! Tickets are limited and they go fast so don't snooze on these! (Our Feb workshop will take place Feb 13th)
Breakfast Pop Up on the Weekends!

HE USES ALL NATURAL FERTILIZERS THAT HE CREATED & SPENT SEVERAL YEARS LABORING LOVE ON THESE COFFEE TREES UNTIL THEY WERE MATURE ENOUGH TO PRODUCE COFFEE.
