Limoncello production is a meticulous process requiring considerable time and patience to perfect. When preparing a batch, I opt for smaller quantities to ensure an exceptional flavor profile and taste. I exclusively utilize organic fruit, occasionally sourcing lemons from the Amalfi Coast when available. The lemons or fruit I use undergo an overnight soaking in a natural solution to remove impurities from the peels, followed by thorough scrubbing and meticulous peeling. The peels are then steeped in premium vodka and left to infuse for 30 to 45 days in a cool, dark environment. Subsequently, the remaining mixture is prepared and incorporated, and the limoncello is left to mature for an additional 30 days prior to consumption.
