1) salt-baked halibut with fiddleheads almondine, celeriac remoulade, honeycrisp and beet agridulce
2) Brunswick stew, ca. 1830: rabbit three ways with local limas, smothered okra, fried shoepeg corn and crisp house-cured bacon
3) overwintered sunchoke hash: werp farm sunchokes in frothed puree and crispy panee, royal trumpet mushrooms, crisp bacon, chow-chow, sauce Bavarian

Sometimes for lunch, you just want a sandwich, hence the popcorn shrimp pistolette 😍 our bread is always homemade so it’s perfect! A pistolette refers to the roll, a shorter French loaf, more ovoid, fatter than a batard. Perfect for stuffing with all sorts of goo things, they are now a fixture on our weekday lunch menu 🥰
