On , we’re highlighting our ongoing efforts to reduce food waste.
Led by Executive Chef Daniel Höfler, our culinary team focuses on smart preparation, portion control, zero-waste recipes, and thoughtful sourcing.
Food waste is weighed and the data is submitted to Gaia 2.0 , which provides reports that help us track our food waste and identify opportunities for reduction. Since the end of 2023, food waste has decreased from approximately 300g to 145g per person, a reduction of more than 50%. (Gaia 2.0)
Through our partnership with , we have also reduced waste sent to landfill by more than 89%.
We will continue to adjust our processes, work with our suppliers and teams to reduce food waste, compost what remains, and identify further opportunities for improvement.
