Meet Linda — the woman who runs the show at Amaru.
“The vibe here is my favorite part. Sometimes it doesn’t even feel like work… just fun,” she says.
When asked what dish she’d recommend right now?
“The ceviche. We just launched a new version and it’s perfect for summer.” 🔥
But what Linda loves most is the community.
“Staff, regulars, new faces — everyone feels more like a friend than a client. Everyone’s a guest here, and we want them to feel safe, welcome, and at home.”
If you see Linda at Amaru, don’t forget to say hi.

Meet Vicente 👋
The heart and leadership behind the scenes at Amaru.
As Director of Operations, Vicente brings passion, positivity, and a deep love for hospitality to everything he does. His favorite parts about working with the Bloom & Amaru team? The incredible food, the daily challenges that keep things exciting, and the amazing staff who make it all happen.
When it comes to what to order, Vicente has strong opinions:
🥪 While Bloom may be closed, he still dreams about the brunch sandwiches.
🇨🇴 At Amaru, he recommends Piononos and Pastel de Elote — two dishes he could eat all day.
What drives him in hospitality is something deeper:
“We have the opportunity to nurture people, but we also carry the responsibility to impact people’s lives.”
Next time you’re at Amaru, be sure to say hi to Vicente — he’s one of the people making the magic happen behind the scenes and the kindest leader in hospitality in Chicago!
