Octopus: Grilled to order and tossed with miso orange butter. Fried potatoes, clam aioli made from clam nectar, fennel and liquor, and herb salad of shaved fennel, celery leaves, pea tendrils and parsley.
Atomic Cake: Rich chocolate cake finished with a glaze of caramel, topped with
strawberry preserves mixed with fresh strawberries. Created in Chicago and named aptly for the layers, or rings around the atom.
Saffron Lobster Malfadine: Rich and savory pasta with cold water lobster and caviar. The dish has French and Italian origins, primarily Amalfi Coast roots.
