There is something a wood-fired oven does to a pizza that nothing else can replicate.
The heat is different. Intense, direct, alive in a way that a conventional oven simply isn’t. It works with our fresh dough, made this morning and transforms it in minutes.
The bottom crisps up fast and hard. The edges blister and char just enough. The toppings cook the way they’re supposed to, quickly and evenly, without losing what makes them good.
The result is a pizza with a depth of flavor that you can’t manufacture. That slight smokiness. That char on the crust that adds something you didn’t know you were missing. That chew in the middle and
