Look at this amazing staff! How would you like to join our lovely team? We're hiring at Logan Square and at Wicker Park, we're looking for some more team members who want to be around great pizza, great cocktails, and a great team environment!

We're expanding Logan Square's hours and looking to bring on folks from prep to pizza makers to service team. Also targeting to expand hours and looking for folks who are ready to do it all!

While starting pay of $15/hr, with equal tip share across all positions, staff have been averaging $18-$36 per hour on every shift, depending on location and shift!

But pay isn't the only thing... You get to make and eat some of the best pizzas made by the best crew making them in woodfired, Detroit, and NY style! You get to work with a team that has passion for everything they do, who work hard and play hard too! You also get 50 percent off your bill wherever you're in with us, and get treated like royalty when your bringing your friends and family in! Had a blast catering a restaurant group's staff party last night with team of and ! Detroit squares and hearth fired pizzas for 200 folks! There's always an interesting and fun challenge learning to work on new equipment in a new kitchen and trying to find your movement flow as a team! Thanks to the phenomenal crew for killing it as always!

Also, great to meet the team from and work side by side with some great people!

Treated the crew to some after the event... Had the limited edition "change is coming" flavor. Felt appropriate.

We’re pizza partying with Paulie Gee’s and our fellowship of the barrel, The Old Order, this Saturday afternoon at the Brewery in Naperville.

The PG’s squad will be serving up their scintillating Sicilian-style square pies from 1-4pm and we’ll be featuring a curated selection of cellar beers from The Old Order catalogue on tap until they run out.

So it begins. I've always believed that children should learn some martial arts .. not only for self defense, but also to help encourage physical activity, focus, body positivity, and hard work. It's good for people of all ages, and I really should get back into it some time soon...

While I don't think she's ready for actual physical combat training (boxing, etc), I'm excited she's starting to learn Shaolin Kung Fu to begin learning how to move and gain endurance and confidence.

She's the youngest in the class, still needs help focusing, but is steadily improving after three classes, much thanks to the Sifu giving her extra attention, which I know won't last forever

And she's been super psyched about her new uniform. 😜❤️. She wanted to show it off everywhere we go. 😂

I don't know if you've heard, but we're taking part in an all you can eat Pizza Fest with some of my favorite pizza makers across Chicago and then some!!

Check it out! A portion of ticket sales go to each participating pizzeria, to costs for the event, and to ! Each day has pizzas from 18 different pizzerias! (36 different pizzerias if you buy tickets for both days!)

This past Wednesday was Simon's last night with us! After six months of working, he is starting a training program for general contractor work!

While most of you probably don't know Simon, you may have seen him on service during the weekends, running dishes and glassware from our pizza area to the back, keeping us loaded with the service ware while sporting some goggles that reminds me of ! He's one of our dishwashers, a valued member of our team that works behind the scenes to ensure a smooth service for all.

Here he is in typical Simon fashion, combining his love of food and devouring our Greenwise Gamgee along with his going away apple pie. 😜

When I first started my journey into pizza, one of the first books I read was American Pie by . My first doughs and initial understanding of different styles of pizza came from his book! So many different pizzas and reading about his journey inspired me to travel and learn more about my own preferences and understanding for pizza.

That's why it's so surreal and such an honor to be included in Peter's latest book! Our US Pizza Cup Detroit style recipe is listed cover band style (Peter recreated everyone's pizzas without asking to divulge specific recipes, like our bacon jam)... And I'm still a bit in disbelief that we're listed with all these amazing pizza makers across the nation in our pizza community... So many colleagues, friends, and mentors in this book. I kinda want to get them all to sign it like a yearbook!!

Also, what an honor to have and in here as well for the Monte Cristo and Hellboy!

first two pizzas are from , which has become one of my favorite pizza spots in the city. the detroit style was my favorite, but the wood fired was also a 10/10.

the sandwich and the salad are from a petite french cafe, , which was very bougie but i loved the vibes and the food was quality.

the next four are sushi, mapo tofu, mongolian beef and crème brûlée cheesecake from . this was one of the best restaurant experiences i’ve had in a long time. the decor, playlist, and service were outstanding and the actual food was incredible as well. would 10/10 recommend.

last is some brioche bread i made which turned out great and some avocado pesto pasta inspired by !!! i had so much fun eating and cooking this week. till next time chicago❤️❤️❤️

While we had some time in LA, I had to visit Justin at ! I was lucky enough to have his pizza at Pizza expo in the past, and have long admired his gorgeous pizzas and photography skills. His pizzas were superb, and my daughter even proclaimed it was the best cheese pizza she's ever had! Thank you for your generosity and hospitality!

And since I recently had just tried to recreate a strawberry donut from at our Superbowl game to rep LA, I had to get some to try... I was able to hit an expansion in a local food court style area, and it was excellent, covered in fresh strawberries galore.

And while it wasn't ideal, I didn't get a chance to enjoy my until a couple hours later, but it really spoke to how good the bread was and the quality of ingredients! Ordered a meatball sub, Italian sub, and some chicken noodle soup that came with a small piece of bread... Definitely enjoyed my time in LA, but unfortunately Cathy was pretty much tolerating pain the whole time...

Catching up on some vacation photos...

Day 1 was a few hours in LA, got to catch up with , my classmate and friend from when we did our Masters in Healthcare Admin together, and eventually worked together at UHC (she recruited me over).

Some In and Out, learning what palm trees are, and be some for good measure on the recommendation of .noto ! Crazy line, amazing bread, very tasty meatball sandwich and killer Italian sub called the Godmother.
