Kindred! What a week we are having! We caught a catering gig that let us stretch our wings, and we are here to pass some of that value ON TO YOU!

SPECIALS, 5.30-6.5

Couvillon Stew: Okay, everyone, we have seen how you come out for gumbo. We have seen how you trust us with hashes from far and wide. We got a new one for you this week. Couvillon is a Creole/Cajun corruption of the French "Court Boullion" which is a fish stock used to poached delicate fish filets. Here, it is a New Orleans variant. You can tell it's Creole rather than Cajun because it has tomatoes in it. It starts with a dark roux, then the Cajun trinity, then garlic, then stock and tomatoes, and when all that comes together, we add tiny bay shrimp, crab, and sous vide cooked red Snapper filets. That delicious mix is served up over painstakingly cooked Basmati rice, with a spray of green onion as garnish. This thing is a bowl full of goodness, and if you like gumbo, you won't believe this bad boy! $19

German Pancakes: A first special from my beloved Godson Zach! He waxed ecstatic about how he used to get this all the time, and I just couldn't deny him another cut at it, as I have never been able to deny him ANYTHING! It's basically a Dutch Baby style raised pancake, puffy and golden, served up with a fresh blueberry coulis, because blueberries are real good with pancakes! We might just put a little squeeze of lemon on there for good measure! Whatever. It's DELIGHTFUL! $15

BREAKFAST "QUESADILLA"- Chef Cory got this idea, and y'all KNOW that when Cory puts his mind to it, he comes up with the illest dishes ever! This is a quesadilla filled with two scrambled eggs, your choice of protein, and melty chihuahua or cheddar cheese, but then also, our signature house country gravy. And OH YEAH, it's served in a FOLDED PANCAKE instead of tortillas! Lord help us all! With house browns. $18

SHANGHAI HASH- I've waited a long time to bust this out. Red Cooking is a Chinese braising technique where you make a very flavorful braising liquid with a brown sugar caramel, soy sauce, shaoxing wine, Chinese aromatics, and loads of whole spices, and then braise the protein low and slow until it is ultra tender and the sauce has reduced. In this case, we used pork belly, and LET ME TELL YOU, IT IS AMAZING! Fragrant, sweet, savory, unctuous, just EVERYTHING. And then we pile that on our house browns and serve it with a side of bok choy with oyster sauce and fried garlic, and two eggs. Come on and see how the Chinese do comfort food. It will blow you away. $20

Aunt Linda's Black and White Cookies: The ICONIC deli/bodega cookie of New York City! It's kind of a cake/cookie hybrid topped with equal parts chocolate and vanilla frosting. This is one of my very favorite sweets, and I hope you will all come and try it, because Linda made it perfect and it will haunt you for the rest of your days. $7

Po' Boy dinner...complete! We would have loved to see more of you, but we put out some FEROCIOUS sandwiches, and we hope that anyone who got one will let us know what they thought!

As today was super long, I'm going to abbreviate this post so I can sleep! So, without preamble-

SPECIALS 5.2-5.8

Debris Beef Hash- Surprise! We made enough to be able to do this special! Braised shredded beef in a New Orleans style Roux thickened gravy over our house browns with two eggs and toast. $19

Seafood and Sausage Gumbo: We also planned ahead to be able to make this dish! Gulf Oysters and Shrimp with smoked sausage in a rich traditional broth, served the proper Creole way, over rice with a side of potato salad or coleslaw, with a toasted roll for dipping. $20

Ramp and Mushroom Omelette: One of the kindred brought us a BIG old bag of ramps, and since they are about to go out of season, we want to feature them at least once! Sautéed Ramps and mushrooms in a three egg Omelette, served with house browns and toast or fruit. $16

Okay, everyone, we are leaving the orders open until tomorrow morning for our Po' Boy take away! There was a BUNCH of technical stuff that might have made it hard to order, so we want to give everyone the chance to get in if they want.

The weather is wonky, and it continues to be a challenge to both our fashion and culinary senses! What to wear? What to cook?

Caprese Omelet: I just can't be done with this stunning combination of flavors. It tastes like sunshine. Diced tomato and fresh mozzarella in a three egg omelet topped with a basil emulsion, served with house browns and toast or fruit. Let's let that warmth in, shall we? $19

The Barnyard Burger: Chef Cory is at it again! This burger has ALL THE ANIMALS! Our seasoned six ounce ground beef patty topped with BBQ pulled pork, bacon, and an egg, any style. Served with house browns or chips, and negotiable toppings. It's big. It's bold. It's freakin' delicious. Come test your might! $20

Trini Chicken Curry Hash: This is my baby. South Asian meets Caribbean in this hash, which is loosely based on a popular Trinidadian street food. Chicken, "washed" in the Caribbean style, marinated in Trini "Greening, then braised tender in a fantastic blend of south Asian spices with chickpeas, served over house browns with two eggs and toast. Listen well, ye faithful. This thing is spicy without being hot, with just a hint of sweetness. I promise, you didn't know you needed this. It's one of the ones that I will think about fondly. You really want to try this. $19

All right, my friends, let's talk about little bit about this Po' Boy dinner!

First, the sandwich! A po' Boy is a New Orlenean mainstay. The roast beef, or debris version is the original, and it was invented by lunch counter owners Benny and Clovis Martin to feed striking Streetcar workers. "Those poor boys!" Ms. Martin exclaimed, in regards to their abhorrent working conditions, and a legend was born.

A Po' Boy is always served on French bread, and we are lucky to have found absolutely perfect sandwich rolls from 3D Baking. They are a perfect blend of shattering crisp crust and pillows soft insides. The sandwich is generally "dressed" with mayo, shredded lettuce, and thin sliced tomato, with optional pickle slices, and we recommend getting them that way.

Debris, or roast beef, is braised to melting tenderness and then served with a beautiful rich beef gravy. It's like an Italian Beef, but silliest.

Oyster is the heavyweight champ. We have found some GORGEOUS medium sized gulf Oysters for this event. They are prized for their perfect blend of sweetness, creaminess, and salinity, and if you are a newcomer (or just are a little iffy about Oysters), these bad boys are the PERFECT place to start! I have done EXHAUSTIVE research to formulate a perfect breading technique, and I am super excited to make these gifts from the sea for you.

Shrimp is the second most popular option, but it is in no way inferior. Again, traditionally, one uses gulf shrimp, and I have managed yet again to secure some beauties! Gulf shrimp are also known for their mild sweetness and tender texture, and we will be using medium sized ones to make sure that that gentle sweetness is very much in evidence. They will also be prepared using our super secret but exhaustively researched and documented breading process, and then they will be piled high on the sandwich.

As for sides, nothing in the world tastes better with fried seafood than cole slaw, and we will be making a version that I have painstakingly reverse engineered from my favorite version (Miller's Pub on Wabash). It's crunchy, creamy, and lightly sweet, and a perfect foil for the crispy saltiness of the seafood! Likewise, we will be serving my own personal version of potato salad, which I have been working on and refining for DECADES! And as a special treat, we are trying to get in Zapps N'awlins style potato chips in case you were of a mind to go that route. Me, I'm a potato salad guy, but people have needs, you know?

As for this cake flight, I am going to get Linda to tell you about it in an upcoming post!

As a reminder, you MUST order online in advance for this dinner, and you MUST give us a pick up time. This is critical so that we can make sure we have enough food, and so that we can serve you your items as close to hot out of the fryer as possible! We really want you to have the best experience you can! Please get your orders in by Tuesday of next week.

I promise you, when you are sitting in your house surrounded by bread crumbs and swiping that last oyster through the dressing of the cole slaw, you will achieve PEAK HAPPINESS!

Kindred, I have to say something. I spoke out of turn to Adam W. Hart in a post here, and I want to publicly apologize to him. He and I have, I hope, cleaned things up privately, and I can only tell you that it was MY baggage and MY reading of the situation that led me to respond to things that were totally NOT present in his post. It was my fault. I am just a guy, and I am working through a lot of stuff, and sometimes I get tired and misread things, and I am really sorry for that. Adam is a friend of the diner, and the EXACT person we are trying to create a space for and welcome into our home. My bad, Dog. My bad.

If we are anything at ECS, it is a place where anyone can come, with all their flaws and humanity, and find welcome, and respite, and love. That extends to the digital world. More, this community is a two way thing. We will hold space for you, deal with you when you haven't had your coffee, and give you grace if you come by when you are not at your best. We will also occasionally, regrettably, need you to do the same for us. Especially me. I am a butthead.

So let me just say again, My Bad, Dog. I should probably get shirts and stuff made as much as I require a little grace!

Okay, everyone, here is an update on our second take away dinner!

We are going to push the date to Friday, May 1st as we had a little technical trouble getting our pre-ordering system up and running.

We are making New Orleans style Po' Boy sandwiches with a couple of sides. The sandwiches are going to be Fried Oyster, Fried Shrimp, and Debris (New Orleans Italian Beef). We will be making cole slaw and potato salad to go with them, and we will be getting some New Orleans chips in as well. A sandwich and two sides will cost $20.

Aunt Linda is contributing to our efforts with a FLIGHT of four different cake slices. Coconut, Carrot, Chocolate with Chocolate Frosting, and Yellow cake with Chocolate frosting. You can add on dessert for $20.

This time, we are requiring that you place and pay for your order in advance so that we are able to shop for enough ingredients to ensure that everyone will get food who wants it.

The pre-ordering page is up and running through our website, just click on the Order Online button and you will be brought to our Toast Online platform. You can pick your sandwiches, sides, and most importantly, your PICK UP TIME! You MUST select a pick up time for your order. I couldn't figure out how to make the pick up time on a per order basis, so you have to select it per item, PLEASE make sure you are picking the SAME TIME FOR EACH ITEM.

Ordering for this event will close next Wednesday, but please order early so that we can get an idea of how many orders we need to shop for.

Oof! So late!

Specials 4.18-4.24

Jerkadillo Hash- Our wholly original fusion hash, featuring a Mexican style ground beef Piccadillo seasoned with Jamaican style jerk seasoning. Fir those of you that are newer around here, this dish is a perennial favorite. With two eggs and toast. $17

Chicken Caprese Sandwich- A chicken cutlet grilled juicy and golden on a hoagie roll with basil mayo, sliced tomato, and fresh mozzarella. Oh, then we panini press that bad boy so it gets all good and melty and crunch on the outside. Hearty enough for the slight chill, but with the flavors of summer. $18

Arakas- Okay, this soup is the PERFECT transition between winter braises and spring vegetables! Carrots, onions, garlic, and potatoes simmered tender in an olive oil and tomato broth, then enlivened by super sweet spring peas. Topped with a crumble of Feta and a lacing of olive oil. It's both comforting and light. Thanks, Greece! $9

Aunt Linda's Peach Cobbker Cinnamon Rolls- You know how she do! Handmade cinnamon rolls filled with her peach pie filling, shot through with gooey frosting, and topped with cinnamon streusel. They taste like the golden sun itself. $6

I have been battling age, infirmity, injury, illness, and just plain whatever else has come at me for WEEKS! Spanish Spring Omlette: Like a quick trip to the Iberian Peninsula! Diced Spanish chorizo sautéed with blanched asparagus in a three egg omitted, with melted aged manchego cheese in the middle. I just LOVE the smoky, unctuousness of this cured sausage as a foil for the freshness of the asparagus in this dish. ¡Bienvenidos a primavera!

Everything Avocado Toast: Our awesome sourdough bread toasted golden brown and spread with house made scallion cream cheese seasoned with everything bagel seasoning, then topped with fresh sliced organic Hass avocados and an herb salad tossed in a citrus vinaigrette. The cool, sweet, greenness of spring on a plate! $14 as is, or topped with two eggs, any style, for $18.

Clementine and Chocolate Pancakes: Our fluffy, golden pancakes infused with the light sweetness of fresh Clementines and shot through with Ghirardelli dark chocolate. You know those Chocolate Orange things they sell in the duty-free store? Like that. With syrup. $14 full, $7 side.

The Quickening Of Aunt Linda: She has returned, apropos of the Easter Holiday, and she comes bringing treats! Personal Chocolate babka drizzled with white chocolate, or bunny shaped palmiers with one white chocolate dipped ear and one milk chocolate dipped ear, and the CUTEST JELLYBEAN FACES IN THE WORLD! The chicken will be seasoned in the style of Charles Gabriel, Chef Of Chicken by Charles in Harlem. He is an absolute master of the game. Our twist is that we sous vide the chicken to perfect doneness BEFORE we bread it and fry it, which means you get the juiciest, most perfect chicken in the most perfect golden crust, every time.

The Mac And Cheese is my personal, family recipe. I won't SAY it's good, but a poor man once ate it and then became rich. True story.

The collards are also our recipe which we have perfected in a VEGETARIAN version. We never thought you could make greens delicious without any chicken stock or smoke meat, but it turns out you can, and you don't even miss it! This fact does NOT reduce our suspicion of vegetables as a class, just greens. We see you, greens. You cool with us.

We are making a Japanese style potato salad. I first had this at Kumiko, under the hands of the legendary Julia Momose, and I have been OBSESSED ever since. It's familiar, yet totally new. It's like you've been eating it all your life, but it's simultaneously totally different. I, a fat man who really loves potato salad, would NEVER take the risk of introducing this dish unless it was a stone cold killer. Come try, thank me later.

We have decided to add some candied yams as a side option, they will be spectacular. We are doing this so that any of our friends who are observing the lenten holiday can come and get a plate of just sides, all of which are vegetarian. Maybe next year we will learn to cook fish!

Oh, and home made, black folks butter rolls. IYKYK. If you don't, prepare for your world to shift.

Okay, everyone, here are some of the deets of our inaugural Fried Chicken Friday dinner!

We will be serving up plates in a 3-2-1 format, which means you get 3 sides, 2 pieces of chicken, and 1 home baked roll in your plate.

The sides will be our homestyle baked mac & cheese, our southern style collard greens, and a wholly novel Japanese style potato salad (you gotta taste this thing to believe how good it is!).

You can pick dark, white, or mixed for your chicken. We are borrowing heavily from Chicken By Charles, whose fried chicken is some of the most popular in Harlem. It is spectacular.

We are baking some good old fashioned butter rolls to go alongside all that--like church lady style, potluck dinner rolls. They are kind as a mother's love.

Each 3-2-1 plate will be $20, and you can pick up your meals between 3 and 6 pm on Friday. Please do us a favor and let us know over the next two days if you intend to get some so we can shop appropriately and make sure there is enough for everyone.
