We had to say goodbye to our beloved mixer Hobie, aka Bertie this weekend. She was born in 1969, refurbished in 1988 and working with us since before Loba Pastry’s conception. My twin and a testament of our care is reflected in this machine, small but powerful, she’s responsible for EVERY SINGLE PASTRY WE HAVE EVER MADE. This Hobart mixed her last batch May 17th and now she will join her sisters in a showroom/museum of antique restaurant equipment. RIP.

Tomorrow Sunday is your last chance to try the Mole Rosa croissant before we move into another Mother sauce.
Made primarily with beets, pinenuts and Ruby chocolate this seasonal croissant carries a bright smokey spice for the lengthy transition into the Chicago Spring 🌸.
