I came up with the lemon cloud cake when I 1st started in 1989. I was supplying local coffee shops at the time, and in an odd, brave moment I decided to bring samples to Neiman Marcus, because they had a small grocery on the 4th floor. The manager, a very sweet but old school regal kind of man named Jim, generously started ordering 20 cakes a week! After the 2nd week, Jim asked for something lemon, and I made this, a yellow sponge cake layered with a homemade lemon curd, with a vanilla buttercream on the outside covered with lemon streusel crumbs. It was an homage to an “impossible” lemon dessert my grandmother would make, where you mixed a cake batter, then while baking it separated to become a lemon pudding on the bottom with the soft cake on top.

And a special “Hi!” to Barb & Jon, who will be celebrating their 25th anniversary this October! I made this for their wedding and always think of them when I make one.

I used to do wedding cakes when we were at my old location on Foster. The kitchen there was massive and allowed for the building and construction. One of my very favorite partners to work with was Debbie Tunney from Ann Sather’s on Clark in Andersonville. She would cater the meal and I would make the wedding cake and do the sweet table.

One day, one of my very favorite employees told me she worked at Ann Sather’s for just a week, and said she didn’t have very positive experiences with Debbie. This genuinely surprised me, because I sincerely thought Debbie was lovely, but I believed my employees version of events.

The next time Debbie and I worked together on a wedding I was rather cold to her, because of the stories the employee told me. Debbie reasonably asked what was up, and I told her what had been said. Debbie lost all color in her face, and she looked like she was about to cry. She walked away, and because of what I heard from the employee, I didn’t feel at all unjustified.

When I was finishing up, and about to leave, Debbie said to me thru tightly controlled tears, “Daniel (and no one but the people who knew me as a child ever calls me Daniel, so this was significant!), don’t believe everything someone tells you. There’s always two sides to every story. Remember that.”

Of course she was correct. Even tho I loved my employee and believed her version of the events, I wasn’t there. And I didn’t know the entire story. It was wrong for me to pass judgement. From this I learned you only know your experience of a person, and that is all you know with certainty. It was an important lesson, and something I ponder often.

Debbie anf I remained friends while she was still here in Chicago, and once she retired, she always stopped in the restaurant while she was in town. For anyone who’s still in touch, please share this with her. She impacted my life greatly.

Once again, Flowerchild on Balmoral near Clark saved the day! My very sweet friend, Jean Swoboda was having a disappointing week and needed a pick me up. I ran across the street, asked if Flowerchild could send a bouquet to her table here at ATOH, and within minutes they surprised her with this gorgeous bouquet! It was such a sweet moment! Someone requested the bread pudding recipe. It’s based on my mom’s recipe that she got out of Better Homes & Gardens magazine in 1952. Mine is FAR less painstaking than her recipe. She used to butter and cinnamon each slice of bread which gave the pudding a beautiful marbled look!

This is our recipe
It’s large, for a 2 quart pan
1.5 long loaves of baguettes
6.5 cups half & half, heated to about 120 degrees (hot, but not steaming or boiling. You should still be able to sip it like coffee)
1 cup butter melted
5 eggs
2 cups sugar
1 teaspoon salt
1 tablespoon vanilla
2 drops orange oil

Butter and flour a 2 quart baking pan. Slice the baguettes into 1 inch slices and arrange in the pan. Fill in all the crevices tightly.

In a food processor blend the sugar, eggs, salt, vanilla and orange oil. Pour mixture into a large separate bowl.

Whisk together the butter and half & half. The mixture should be hot to the touch, but not enough to burn your finger. Slowly add the cream mixture to the egg mixture whisking constantly til completely combined. The purpose of heating the cream prior is to help the sugar dissolve.

Place the prepared pan of bread inside a larger pan. Slowly pour the custard mixture over the bread. Not all of the custard will fit, so let it sit, and slowly add more. This process takes about an hour until the bread completely absorbs the custard mixture.
After and hour, and no more of the custard mixture can be added, preheat the oven to 300. Pour water into the larger pan to create a water bath for the bread pudding. Sprinkle a dusting of cinnamon on top, then carefully place the bread pudding in the oven for approximately 45-55 min. The bread pudding is done when it starts to rise out from the pan. We cool ours for about 4 hours prior to serving, but at home you may like to serve it warm, so 2 hours should be fine.

The story of the lamps😏

Back in the 1980s, I worked as a server in upscale restaurants. During that time, there were only a few fine dining establishments, maybe20-30, and there was a strong sense of camaraderie and respect for one another due to our limited numbers. A genuine sense of community existed among the fine dining establishments of that time. One such establishment was Jimmy’s Place, situated on an unusual stretch of Elston Avenue, between Addison and Irving. Notably, there were no other businesses in the vicinity. Jimmy Rohr, formerly the maitre’d at L’Escargot, managed to secure funding to open this restaurant at that location. The establishment was deeply personal, evoking the feeling of visiting an eccentric relative. Jimmy’s favorite color, lime green, was prominently featured in the banquet and chair upholstery. His love of opera was also evident in the background music. The design was almost idiosyncratic, yet it achieved immense success, largely due to the inventive culinary expertise of Yoshi Katsumura, who later established Yoshi’s Cafe on Halsted. Jimmy consistently displayed a lamp in his front window, which I always found to be a warm and inviting touch. When I opened A Taste of Heaven to the public in 1994 on Foster, following nearly five years of wholesale baking for cafes like Kopi Cafe and Java Jive in Lakeview on School, I brought the only lamp I owned from my home and placed it on the counter. Later, I met a woman who owned a pottery shop on Irving called Gone to Pot, where she created the original stacked coffee cup lamps shown here. By then Jimmy had retired. And tho we never met, I sent him a letter in which I said if he ever happened to passed by my tiny shop on Foster, and saw my lamps, to know they were an homage to him. For creating a space that you felt like you were visiting someone’s home.

The story of the scones starts at the very beginning, in 1989, when I first started A Taste of Heaven. I was dating someone from New Zealand, and he taught me that when making scones, you always freeze them before baking them. Fast forward to Monday, November 2nd, 1994; I was just about to open A Taste of Heaven to the public, and suddenly realized that we should serve scones, since they were such a hot item at the time. So I started researching recipes, and found that using buttermilk in scones made them softer, more moist and lighter than using cream or milk. That recipe I developed in such a rush that day is still the same recipe we use today! Right now we serve 11 different kinds every day, including peach-ginger, blueberry-lemon and strawberry cream cheese. $2.75 each.
We make the dough and form them the night before, then bake them when we 1st come in in the morning, like my friend from New Zealand taught me!

I want to give a HUGE shout out to the ICONIC Gale Street Inn in Jefferson Park on Milwaukee between Lawrence and Foster! My friends Jean and Larry took me there for a belated birthday celebration and it was truly one of the best meals I’ve had in a very long time! The food was outstanding, the service was old school and very professional, and the room….the room is like stepping back into the 60s! Beautiful murals, lighting and classic architectural details! And what a bustling strip that area is!! It’s a really happening area! Huge thanks to Jean and Larry! This meal made my birthday very special! Man, I’ve missed those nice thick burgers! And the fries were primo, too!

My friend Sherry Barnett asked how I came up with the name of A Taste of Heaven. This is the story (and, as my friend Michael Schurman says, “There’s ALWAYS a story!”):

I went thru a period in my late 20s where I kept getting fired from jobs
My therapist at the time was VERY spiritually motivated, and thought all things happen as they’re supposed to, suggested that all the firings probably meant that I was supposed to start my own business

She suggested that since I loved baking that I should consider doing that for a living
This really opened my mind to the idea that my life was being guided
Her office was in Evanston, and my home at the time was in Lakeview, and that day I walked the entire way home
It was late October, and it was beautiful out
And as I walked, the leaves were falling and swirling around me
It felt magical
Watching the leaves fall and swirl around my feet, I thought of the idea of stars falling from heaven
Later that day I was looking thru a book of antiques, and saw a picture of an Angel and thought of how this whole idea of becoming a baker felt like it was Heaven Sent
That was the original name I came up with, and tbh, I wish I stayed with, because it still feels most authentic
But it was trademarked, so fearing ramifications, I switched to A Taste of Heaven

Ok, here’s my 2nd attempt at the Nanaimo Bars! We left off the dreaded almonds this time because of the many comments we received😏. Also, I added more coconut and less graham crackers to the crust to make them more chewy! One mistake I did make is I cut them too large this time (4”x2”), so they’re $5.95 each. I’ll cut them smaller going forward. Canadians, please let me know your thoughts? I really appreciate it!
