New Single Origin 🚨 ☕️ 🐒 Mico de Noche (Night Monkey)
Grown near the border of Guatemala, this lot from two small-holder producers in the southeast of Chiapas is one of the sweetest coffees you’ll taste. With notes of caramel, nuts and milk chocolate, this medium roast coffee is reminiscent of your favorite chocolate bar without the calories! 🍫 🥜 🙈! In the southeast of Chiapas, the farms that produce this coffee are located around the famous town of Tapachula. This area has always been important for its fertile soil, agriculture, and mixed climate due to varying altitudes. Often, the hotter lower-lying areas by the river are flooded, while the cooler coffee highlands remain safe. These varying climates allow the region to grow a variety of crops for consumption and sale. The Micos de Noche or the night monkeys are famous in the region and can be heard across the coffee farms. This biodiverse environment is perfect for their survival with a wide variety of things to eat. NIGHT MONKEY.

Peru Canaris Lambayeque is here!
A juicy washed coffee that is bursting full of rich berry and grape notes. With an extended fermentation to maximize clarity and sweetness, this coffee is juicy with delightful caramel notes to balance out the cup.
Cañaris sits high in the northern Andes of Peru at just above 2,000 meters, surrounded by misty ridges and Quechua-speaking communities. At his farm, Javier Diaz Tapia has been growing a number of varieties including Caturra, Catimor, Bourbon and Typica. This lot is a stunning example of Javier’s dedication to growing quality at the farm level. By using natural fertilizers such as guano and improving his drying and fermentation processes, he has not only produced more coffee, but better coffee. This lot is a testament to Javier’s work and is sure to thrill all coffee lovers.

This coffee is a delightful representation of all the autumn flavors we know and love. Think floral, juicy, fresh apple cider with sweet pumpkin bread that leaves a lingering finish with a syrupy mouthfeel.
Luis Anastasio Castro, better known as Tacho, leads the operations at the Juanachute micromill. This lot of Caturra and Catuai underwent red honey processing where freshly handpicked cherries underwent fermentation for 48 hours, and were then dried and turned on raised beds for roughly 25 days. This dedication to high quality milling and processing leaves this coffee with a delightfully sweet and syrupy profile that is sure to please coffee lovers of all types.

What people say
Metropolis Coffee Company is a small batch artisan coffee roasteria and cafe located on W Granville Avenue in the heart of Chicago. This father- and son-owned business has gained popularity for its high-quality coffee blends that are created with utmost care and precision. One of their most popular blends, Project X, was created for Sawada Coffee and Hiroshi Sawada by Metropolis Coffee Company. This espresso and coffee blend seamlessly recreates the flavor of classic Japanese style coffee while also capturing its intent. Another noteworthy blend is Xeno's Decaf, which is certified Fair Trade and Organic. It boasts a sweet and toasty flavor that is comforting to the palate. What sets this decaf apart from others is its natural decaffeination method that uses water instead of solvents to gently remove caffeine from raw green coffee beans while preserving the amazing flavor. With such attention to detail in their blends, it's no wonder why Metropolis Coffee Company has become a go-to spot for coffee lovers in Chicago.
