Our Mole Manchamanteles is one of Mexico’s most celebrated moles, known for its balance of chiles, spices, fruit, and tradition. The name translates to “tablecloth stainer,” a playful nod to the rich sauce so flavorful it was said to leave its mark on every meal.
At Sol de Mexico, Chef Carlos still prepares this mole from scratch using the techniques passed down to him by his mother-in-law, the legendary chef Clementina Flores, affectionately known by many as “The Mole Goddess.” For decades, her moles helped define Mexican cuisine in Chicago, and her legacy continues in every batch we make today.
This dish features tender pork, house-made chorizo, grilled pineapple, sweet plantains, and creamy garlic mashed potatoes, all brought together by a mole that requires patience, skill, and 29 ingredients.
