This one takes generations.

Our Mole Manchamanteles is one of Mexico’s most celebrated moles, known for its balance of chiles, spices, fruit, and tradition. The name translates to “tablecloth stainer,” a playful nod to the rich sauce so flavorful it was said to leave its mark on every meal.

At Sol de Mexico, Chef Carlos still prepares this mole from scratch using the techniques passed down to him by his mother-in-law, the legendary chef Clementina Flores, affectionately known by many as “The Mole Goddess.” For decades, her moles helped define Mexican cuisine in Chicago, and her legacy continues in every batch we make today.

This dish features tender pork, house-made chorizo, grilled pineapple, sweet plantains, and creamy garlic mashed potatoes, all brought together by a mole that requires patience, skill, and 29 ingredients.

We are deeply grateful for the support that has allowed us to remain Michelin-recognized for consecutive years. Every reservation, every visit, and every recommendation helps us continue sharing the regional flavors of Mexico with our community.

For nearly 20 years, Sol de México has been a labor of love ❤️ a family-owned dining experience rooted in the regional flavors of Mexico, crafted from generations of tradition and heart.
Whether you’re joining us for the first time or returning to a table that already feels like home, we want you to know something special happens in our kitchen every single night.
Every entrée that leaves our kitchen is personally prepared by Chef Carlos himself. He is cooking for every guest in our dining room, because here, nothing is rushed and nothing is handed off. That level of care takes time, and we believe you deserve every minute of it.
We kindly ask for your patience as Chef Carlos gives each dish the attention it deserves. Great food cannot be hurried, and when you take that first bite, you’ll understand why.
And when the evening allows, Chef Carlos steps away from his kitchen and into the dining room, personally checking in with each table to ask how their meal was. Because for him, your experience does not end at the plate.

Today we celebrate a very special milestone. Happy 60th Birthday to Chef Geno Bahena.

Throughout the years, his passion and dedication to preserving traditional Mexican gastronomy have earned him great respect in the culinary community. Chef Geno has also achieved the distinguished title of Master Chef and has been featured in culinary books and chef publications that highlight influential Mexican chefs in the United States.

For us, this celebration is even more meaningful because Chef Geno is family, the son of Chef Clementina Flores, known to many as the “Mole Goddess,” and the brother-in-law of Chef Carlos Tello. Coming from such a remarkable culinary legacy, Chef Geno carries forward the same deep respect for Mexican gastronomy, tradition, and the stories behind every dish.

Turning 60 years old is a beautiful milestone. Today we celebrate not only a chef who has contributed so much to Chicago’s Mexican food community, but also a wonderful person who has inspired many throughout the years.

They’re finished with our house made cajeta, a traditional Mexican caramel slowly simmered from goat’s milk and Mexican cinnamon sticks until it becomes rich and silky.
