What started as a childhood dream became a goal three years ago.
Back then, it was backyard pizza nights, a pop-up tent, portable pizza ovens, a few folding tables, and a lot of hope. We spent weekends learning, experimenting, making mistakes, and a whole lot of pizzas slowly building we believed in.
That little backyard setup turned into a bigger tent at the markets. Then to a food truck turned into farmers markets, festivals, private events, and catering. And now, we’re building our first brick-and-mortar home in Norwood Park.
As we get closer to opening, we’re looking for the people who want to help write the next chapter with us.
We’re hiring for:

🍸 Bartenders
🧼 Dishwashers
We’re not looking for people to simply fill positions. We’re looking for teammates who take pride in hospitality, work hard, care about great food, and want to help build something special from day one.

Getting a restaurant ready to open means no two days look the same…
Today brought us downtown for barstools, paperwork, and checking off a few more boxes.
On the way back, we stopped by our neighbors right down the street for a meatball sub, a cannoli for dessert, and to catch up with friends and get some much needed fuel.
Moments like that remind us why we’re so excited to call Norwood Park home. ❤️🔥

It’s honestly hard to put into words what it feels like putting up these posters in our windows.
From backyard pizzas, to a tent then food truck at farmers markets and now building a place to call home in Norwood Park.
This journey hasn’t been easy, but every step, every risk, and every sacrifice has led us to here.
And we’re just getting started. 🔥🍕

Today starts with an early morning bagel run with Anthony, packed like sardines, full of scaffolding, and that Chicago skyline reminding us exactly why we’re doing this.
Today we start cleaning, beginning with the open ceiling.

This week has been all about R&D at home cooking, tasting, and dialing in the classics.
Each dish is being carefully refined with tradition and balance in mind, with one goal consistency, comfort, and flavor in every bite.

I didn’t get a post up yesterday, but training is officially underway with the team at . I am incredibly grateful to be spending the next three weeks learning the rhythm of the restaurant and working alongside Ewelina, Antonio and the incredible staff.
Sapori will continue to run until December 21. Thank you all for the support, exciting things ahead.

On the day before Thanksgiving, we want to share something we are incredibly thankful for.
This dream started when I was a kid, but I never imagined it would truly become a reality. We began in our backyard with a couple of pop ups, just hoping people would enjoy what we created.
Today, as a family, we are humbled and grateful to announce that we are nearing the end of the process of purchasing a restaurant in the Norwood Park neighborhood at 6050 N Northwest Highway.
None of this would be possible without all of you. Every order, every kind word, every visit to the truck you helped build this dream.
From the backyard…
to the streets…
to a home of our own.
Thank you for believing in us. Thank you for supporting us. Thank you for being part of this journey.
As we head into Thanksgiving, our hearts are full. The next chapter of Forno Pavese is officially underway.

For public transport, take the Yellow Line to the Oakton-Skokie stop and then transfer to the 97 bus. Get off at the Milwaukee/Notre Dame stop and walk a few blocks to the destination.
