Menu Highlight: Don's Seafood Gumbo

It's gumbo weather!* Chef Chris Reed has adapted the Bumbu Roux recipe from the one that his father Don used to make growing up, which he adapted from a family recipe written down in an old leather-bound ledger. Don grew up in Napoleanville, Louisiana, so it's safe to say we know a thing or two about authentic gumbo.

Fun fact: we discovered a few years ago that the written recipe is strikingly similar to the recipe in "Red Beans and Rice-ly Yours: Recipes from New Orleans that Louis Armstrong Loved (https://nmaahc.si.edu/object/nmaahc_2014.82.2) ," published in 2008, further proving that this is a quintessential take on this Southern classic.

*we believe that all weather is gumbo weather, but in the Midwest, we find that folks tend to get most excited about it when the weather turns cold.
