Last week, we headed to Dallas for the Central Market Vendor Showcase, giving their leadership team a taste of our extensive portfolio, from fresh proteins to specialty foods and everything in between.

Our friends at Tempesta Artisan Salumi and Loch Duart Salmon joined us to showcase artisanal salumi and premium Scottish salmon, while Sushi Chef Shinobu served up fresh sushi featuring Fortune ahi tuna, Loch Duart salmon, and Aquanaria sea bass.

Rack 'em up! Our porcelet rack is tender and juicy on the inside and shatteringly crispy on the outside. Chef Danny Brown showed us his method.

D'Artagnan introduced porcelet to the U.S. years ago, and it has developed a cult following among chefs. Known as cochon de lait in French, milk-fed suckling pig is a true delicacy and makes a great addition to Porktober menus. 🐖

Here's something you don't see every day! Our own Chris Blankenbaker flashed his knife skills with a swordfish cutting at Busch's Fresh Food Market in Canton, MI. Not many people get to see the drama of a whole swordfish broken down into the steaks they put on a grill. So, Chris gave them a close-up view of something we do all day at Fortune.

We love to partner with our retail customers for in-store demos like this. Seeing where food comes from and the skills that go into preparing it for the plate is a vital experience for consumers. As we say on social media, "Can AI do this?!"
