These days recognizing Eggs and Cheese are a perfect time to talk about our omelets. Shown here is our Chorizo Omelet (with toast). While we will remove ingredients if desired, we will not add, as this affects the integrity of this omelet, with chihuahua cheese inside and topped with onion, cherry tomatoes, a drizzle of sour cream and sprinkle of cilantro and cotija. Our meat omelet contains pork sausage and bacon; our veggie omelet includes onion, bell pepper, spinach, mushroom and tomato. The 'everything' omelet has those meat and veggie offerings. Those three omelets offer a choice of cheddar, chihuahua, or pepper jack cheese. The combo with all four types include our great hash browns. A great way to start the day!

Once the precious sap is harvested, it is 'cooked down' into pure maple syrup. Some 40 gallons of sap is needed to make one gallon of syrup. We serve about 2.5 gallons of syrup each week, and are grateful for the trees which share their gift of life with us -- and we hope that you enjoy and savor the taste with every bite of your buttermilk pancakes or classic french toast!

Maple trees form a 'community,' growing near each other, and at 'tapping time' are literally connected to each other for a few weeks. Maple sap flows best late winter when the daily high temperature is 40-45 degrees and the nighttime low is 20-30. Most years, that ideal period takes place over only 3-6 weeks. That means that a whole year's supply of maple syrup must be harvested in those few weeks. Another reason why this is such a precious substance! Yes, the taps are removed at the end of those weeks to allow the tree to heal and for the sap to nourish the tree itself....

We had the pleasure and honor of picking up 55 gallons of pure maple syrup from the Richter family farm in Wisconson last Monday. Some may wonder why we offer such a small amount of syrup with our pancakes. Honestly, pure maple syrup is a treasure of nature, to be savored and appreciated. This photo shows a tap with a drop of the nearly clear sap coming from a tree. It takes about 40 gallons of this sap to make just one gallon of pure maple syrup! We will be sharing more about the process in coming days ---

What people say
Tom's Place - Back of the Yards is more than just a restaurant, it's a community hub. Located on W 47 Street in Chicago, this homestyle American breakfast spot offers not only delicious food but also a chance to meet and connect with others in the area.
One thing that sets Tom's Place apart is their commitment to supporting local causes. Recently, they announced that they would be closing early on a Saturday to support the Peace and Education Scholarship fund, which has awarded about $1 million over the years to students involved in volunteer service in the Back of the Yards community. It's heartwarming to see a business giving back like this.
But let's talk about the food. Tom's Place is known for their seasonal pancakes, and their latest creation - Blueberry Pancakes with fresh blueberries and lemon zest - is no exception. They also offer other classic breakfast dishes like omelets and waffles.
In addition to being a great place to grab breakfast or brunch, Tom's Place has also created a Little Free Library outside of their restaurant. This initiative has been going strong for a year now, with locals contributing and taking books as they please. It's wonderful to see businesses like Tom's Place fostering literacy and community engagement.
Overall, if you're looking for delicious food served with a side of community spirit, look no further than Tom's Place - Back of the Yards.
