Chi-Ibigan II was a success! Thank you to all the friends, chefs, and community members who made this night of celebrating Filipino culture possible.

Our chef/co-owner John Avila 🌊🌸 is proudly half Filipino. A mix of both Indonesian and Filipino cultures were part of his upbringing. So much so that he often would get them mixed up when he was a kid. The dishes he cooked last night were a celebration of that- a mix of Filipino and Indonesian.

The first dish was the Jolly Renduck-Inn Chicken Hot Dog- our take on a Jollibee hotdog. This dish was a true collab between Chef John and Kevin Hickey of The Duck Inn Chicago . Duck Inn Dogs hot dog, rendang chili cheese, and banana ketchup.

Our second dish was Telur Balado Deviled Eggs- inspired by Filipino balut. Telur Balado is a popular Indonesian dish featuring hard-boiled eggs that are fried until golden and then coated in a rich, spicy sambal balado sauce. But since chef grew up in the Midwest, he turned it into everyone’s favorite- deviled eggs.

If you didn’t get to try, maybe ask chef reallyyyyyyy nicely if he’ll do it at the shop. Idk. He makes the rules. We just post about it.

Chi-Ibigan II was a success! Thank you to all the friends, chefs, and community members who made this night of celebrating Filipino culture possible.
