What we see:
an ingredient before it becomes an idea.
A texture before it finds its contrast.
Technique, process, and a hundred small decisions made along the way.

What you see:
the plate.

Ingredient by ingredient. Texture by texture. Detail by detail. Each element considered on its own, then brought together as one.

Iberico

Pork belly, house-made sausage, and Iberico loin with chicharrón, pea and fig purées, and walnut jus. Served alongside laminated cornbread with lardo and whipped fig butter.

Pork remains at the heart of this course, while everything around it evolves with the season and what we find at the market.

Chicago meets Carmel-by-the-Sea for one night only.

On Sunday, September 27, Esmé welcomes Michelin-starred Chef Jonny Black of Chez Noir for a special collaborative dinner with Chef Jenner Tomaska, presented by SALTY Magazine and OpenTable.

Chef Black’s career has taken him through some of the country’s most celebrated kitchens, from Per Se and Quince to Pineapple & Pearls and Atelier Crenn, before bringing him to California’s Monterey Peninsula. There, he opened Chez Noir, his European-influenced expression of California coastal cooking, earning a Michelin star within its first year.
For one evening in Chicago, Chefs Black and Tomaska bring their distinct perspectives together at Esmé for a collaborative menu shaped by season, place, and a shared commitment to thoughtful cooking.

Sunday, September 27

One night only at Esmé.

Reservations are now available through OpenTable.

Arte Haus Studios & 𝗙𝗥𝗔𝗠𝗘 𝗖𝗛𝗜𝗖𝗔𝗚𝗢 | Since 1981 Presents: Hebru Brantley at Esmé

Hebru Brantley is one of Chicago’s own — a South Side–raised, multidisciplinary artist whose work reimagines heroism, memory, and identity through a visual language built from comic books, anime, graffiti, and the Harlem Renaissance. His characters have traveled from Chicago murals to collections held by the Pritzker family, Jay-Z and Beyoncé, and George Lucas.

Now his world comes to the table. Once and Future marks a new chapter in Hebru Brantley’s evolving practice, bringing together a body of work that reflects the continued evolution of his visual language. Presented in Chicago, the exhibition extends beyond the traditional gallery setting, inviting guests to experience art as part of a broader cultural and culinary dialogue.

Some ingredients ask for precision. Rouget demands it.

Each fillet is painstakingly cleaned before meeting fermented Jimmy Nardello peppers, plum, fennel, and a rich beef jus. Finished with a fennel cloud that mirrors the foam on its accompanying non-alcoholic pairing.

Experience the Ashley Longshore menu before it leaves at the end of this month!
